Instructions
 

  • Step 1: Cook the Pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  • Step 2: Prepare the Vegetables. Wash and chop the vegetables. Halve the cherry tomatoes, dice the bell pepper, rinse and drain the black beans, and chop the cilantro. Add avocado just before serving.
  • Step 3: Make the Dressing. In a medium mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, and a pinch of salt and pepper. Whisk until smooth.
  • Step 4: Combine Ingredients. In a large mixing bowl, add cooled pasta, chopped vegetables, and black beans. Pour dressing over and gently fold together.
  • Step 5: Add Avocado. Just before serving, gently fold in diced avocado.
  • Step 6: Chill. Cover and refrigerate for at least 30 minutes before serving.

Notes
