Instructions
 

  • In a large bowl, combine the olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well to create a marinade. Add the chicken breasts, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
  • Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until cooked through and internal temperature reaches 165°F. Remove and let rest.
  • In a medium saucepan, combine cream cheese and milk over medium heat. Stir until smooth. Gradually add shredded cheddar cheese, stirring until melted. Add paprika and mix until creamy. Adjust consistency with more milk if needed.
  • Slice the cooked chicken and place on a serving platter. Pour the warm cheese sauce over the chicken.
  • Garnish with fresh cilantro if desired. Serve immediately with sides like rice, beans, or tortilla chips.
