Equipment

  • Wooden Spoon
  • Mixing Bowl
  • Frying Pan
  • Skillet
  • Chef's Knife
  • Oven

Ingredients

  • 1 lb chicken breast cubed
  • 2 tablespoons taco seasoning
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 1/2 cup salsa
  • 1/2 cup water
  • 1 cup shredded cheese
  • 2 cups crushed tortilla chips
  • green onions optional for serving

Instructions

  • Preheat your oven to 350°F (175°C). If you’re using a baking pan, grease it with nonstick cooking spray and set it aside. This will ensure that your casserole doesn't stick and is easy to serve later.
  • In a large skillet over medium heat, add the cubed chicken breast. Cook it until it’s browned all over, which should take about 5 to 7 minutes. You want the chicken to be golden and fully cooked through.
  • Once the chicken is browned, sprinkle in the taco seasoning. Stir it around to coat the chicken evenly, letting the spices work their magic. The aroma will be irresistible!
  • Now, it’s time to stir in the black beans, corn, salsa, and water. Bring everything to a simmer for about 5 minutes. This allows the flavors to meld together beautifully, making sure every ingredient is well combined.
  • After simmering, pour the mixture into your greased baking pan if you're using one. Alternatively, you can keep it in the skillet and simply top it with crushed tortilla chips and shredded cheese right in the pan. Make sure to spread the tortilla chips evenly over the top, then sprinkle the cheese generously.
  • Place the casserole in the preheated oven and bake for 10 to 15 minutes. You want it to bake until the cheese is beautifully melted and bubbly. Keep an eye on it to prevent burning.
  • When the Mexican Chicken Casserole is done, take it out of the oven and let it cool for a few minutes. This helps the casserole set a bit, making it easier to serve.
  • Before serving, top with some fresh chopped green onions for a pop of color and flavor. They add a nice crunch and elevate the dish!
  • Serve this delicious casserole warm, and watch as everyone digs in. Enjoy it with a side salad or your favorite dipping sauces!

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 to 4 days. Reheat in the oven or microwave until warmed through.
  • Freezing: This casserole freezes well! Freeze before baking, then thaw overnight in the fridge before cooking. It can be a lifesaver for busy days.
  • Pairing: Serve with a fresh salad or guacamole to balance the flavors. A side of rice or beans also complements the casserole perfectly.
  • Spice Levels: Adjust the taco seasoning according to your taste. You can also add jalapeños for an extra kick!
  • Cooking Variations: Experiment with different cheese types, like pepper jack for a spicier flavor or a blend for a richer taste.
