Equipment

  • Chef's Knife
  • Oven
  • Mixing Bowl

Ingredients

  • 1 thin baguette 1 thin baguette
  • 1/4 cup 1/4 cup olive oil
  • 2 cans 2 cans Genova Tonno Solid Light Tuna in Olive Oil
  • 2 tablespoons 2 tablespoons chopped fresh basil plus 1/4 cup chiffonade fresh basil leaves (optional garnish)
  • 1 tablespoon 1 tablespoon freshly squeezed lemon juice or more to taste
  • salt and freshly ground black pepper to taste
  • 1 cup 1 cup hummus
  • 1/3 cup 1/3 cup pesto

Instructions

  • Preheat your oven to 400 degrees F. This ensures that the baguette slices will toast evenly and become perfectly crispy.
  • Slice the baguette along a diagonal into 1/4 inch slices using a serrated knife. It’s important not to slice them thicker than 1/4 inch, as this will make them difficult to bite through once toasted.
  • Place the slices on a cookie sheet. Brush the tops of the bread pieces with olive oil. This helps them achieve a beautiful golden brown color while toasting and adds flavor.
  • Put the bread into the oven and let it toast for 8 to 10 minutes until the bottoms of the bread slices are golden brown and toasted. Flip the slices halfway through to check for doneness—they will brown more on the bottom than on top.
  • In a mixing bowl, combine the tuna, 2 tablespoons of chopped basil, lemon juice, salt, and black pepper. Mix until well combined, ensuring the flavors meld together.
  • To assemble your crostinis, start by spreading 1 1/2 teaspoons of hummus on each toasted baguette slice. This creamy base will enhance the overall texture.
  • Add 1/2 teaspoon of pesto on top of the hummus. The pesto adds a vibrant flavor that pairs perfectly with the tuna.
  • Finally, top each crostini with 1/2 tablespoon of the tuna salad you prepared earlier. Be generous—this is the star of the show!
  • Garnish with chiffonade fresh basil, if desired. This not only adds a pop of color but also enhances the dish's aroma.

Notes

  • Tip 1: Store any leftover crostinis in an airtight container in the refrigerator for up to two days. They are best enjoyed fresh but can be refrigerated for convenience.
  • Tip 2: You can freeze the assembled crostinis, but it's best to freeze the baguette slices separately. Toast them again after thawing for the best texture.
  • Tip 3: Serve with a fresh salad or a light soup for a complete meal.
  • Tip 4: Swap out the tuna for chicken or chickpeas for a different flavor profile.
  • Tip 5: Consider adding capers or feta cheese crumbles for an extra burst of flavor.
