Ingredients
  

  • 2 cups dry quinoa
  • 2.5 ounces baby spinach
  • 1/2 large red onion chopped
  • 1 cup sun-dried tomatoes julienne cut, drained
  • 1 cup kalamata olives pitted and halved
  • 1/4 cup olive oil
  • 2 tablespoons cider vinegar
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon sea salt to taste

  • Prepare the quinoa according to package instructions. Rinse it thoroughly under cold water to remove any bitterness. This step is crucial for achieving a light, fluffy texture. Once it is cooked, let it cool slightly.
