Equipment

  • 9x13-inch Casserole Dish
  • Glass Mixing Bowl Set (3 piece)

Ingredients

  • 2 cups ricotta cheese
  • ¼ cup sugar
  • 1 each egg
  • ½ cup raisins
  • 5 each crepes
  • ¼ cup maple syrup
  • to taste icing sugar for dusting, optional

Instructions

  • Preheat your oven to 375℉. This is an essential step, as it ensures that your crepes will bake evenly and achieve that perfect golden hue. Don’t forget to lightly grease your casserole dish with cooking spray to prevent sticking.
  • In a medium-sized mixing bowl, combine ricotta cheese, sugar, egg, and raisins. Use a whisk or fork to mix until everything is well incorporated and smooth. You want the mixture to be creamy and not too runny, so take your time to mix thoroughly.
  • Now it’s time to fill the crepes! Take one of your pre-prepared crepes and place about ⅕ of the filling in the center, approximately 3 tablespoons. Carefully fold the crepe like an envelope, making sure the filling is well sealed inside.
  • Place each folded crepe seam-side down in the greased casserole dish. Arrange them neatly so they’re snug but not overcrowded. This will allow them to heat evenly in the oven.
  • Once all the crepes are in the dish, pop them into the preheated oven and bake for 10 minutes. This step allows the flavors to meld beautifully and the crepes to warm through, becoming soft and fluffy.
  • After 10 minutes, remove the casserole dish from the oven. The crepes should be lightly golden on top. Drizzle maple syrup generously over the warm crepes, letting it soak into every bite. For an extra touch of sweetness, you can dust them with icing sugar.
  • Serve the crepes warm, allowing everyone to enjoy the delicious aroma and flavors. You can garnish with some fresh fruit or a dollop of whipped cream if desired, making it even more special.

Notes

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat gently in the microwave.
  • Freezing: You can freeze the crepes and filling separately. Thaw in the fridge overnight before reheating.
  • Pairing: These crepes pair wonderfully with a side of fresh fruit, like strawberries or blueberries, to balance the sweetness.
  • Customization: Feel free to experiment with different fillings, such as adding spices like cinnamon or nutmeg to the ricotta.
  • Serving Size: This recipe makes about five servings, but you can easily double it if you’re hosting a brunch.
