Ingredients
  

  • 9 tablespoons Olive Oil divided use
  • 3 cups All-Purpose Flour
  • 3/4 cup Semolina Flour
  • 1/2 teaspoon Salt divided use
  • 1 1/2 tablespoons Quick-Rising Yeast
  • 1 1/2 cups Warm Milk
  • 1 tablespoon Fresh Rosemary Leaves

Instructions
 

  • Start by pouring a scant tablespoon of the olive oil into a 9-inch round cake pan. Spread it evenly to cover the bottom and sides. This will help prevent the bread from sticking.
  • In a mixing bowl, combine the all-purpose flour, semolina flour, 2 tablespoons of olive oil, 1/4 teaspoon of salt, and the yeast. If you prefer, you can mix these ingredients by hand, but using a mixer fitted with a dough hook makes the job easier.
  • Blend the ingredients on medium speed until combined. Once they are mixed, reduce the speed to low and gradually add the warm milk. This step is crucial as adding the milk slowly will help the dough to form without becoming too sticky.
  • After adding the milk, raise the speed back to medium and mix for about 5 minutes. If you’re kneading by hand, aim for about 8 to 10 minutes of kneading until the dough becomes smooth and elastic.
  • Sprinkle a little flour on the bottom of your prepared cake pan. This will further prevent sticking and create a beautiful base for your bread.
  • Remove the dough from the bowl and spread it out evenly in the pan. Cover it with a towel and allow it to rest for 30 minutes. This resting period lets the dough rise and develop flavor.
  • While the dough is resting, preheat your oven to 400°F. Getting the oven hot ensures that the bread will bake evenly and develop a lovely crust.
  • Once the dough has rested, brush the top with 1 to 2 tablespoons of olive oil. This will create a golden, crispy top as it bakes. Sprinkle additional salt and rosemary on top for added flavor.
  • Bake the bread in your preheated oven for about 20 minutes. Keep an eye on it; the bread should be golden brown when it’s done, and your kitchen will smell heavenly. As soon as it’s out of the oven, drizzle the remaining olive oil on top for an extra touch of richness.
