Instructions
Start by preparing the marinade. In a mixing bowl, whisk together the freshly squeezed lemon juice, olive oil, minced garlic, chopped parsley, cilantro, oregano, salt, and pepper.
Cut the chicken breasts into 1-inch cubes and place them in a large resealable plastic bag or a bowl.
Pour the marinade over the chicken, seal the bag or cover the bowl, and refrigerate for at least 30 minutes.
While the chicken marinates, soak your wooden skewers in water.
Preheat your grill or grill pan over medium-high heat.
Thread the marinated chicken pieces onto the skewers, leaving space between each piece.
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F (75°C).
Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
Serve warm, garnished with additional fresh herbs and lemon wedges.
