Ingredients
  

Chicken Breast

  • 2 pounds boneless, skinless chicken breasts Cut into 1-inch cubes.

Lemon Juice

  • 2 large lemons Freshly squeezed juice.

Olive Oil

  • 1/4 cup extra virgin olive oil For marinating the chicken.

Garlic

  • 4 cloves fresh garlic Minced.

Fresh Herbs

  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped fresh oregano

Salt and Pepper

  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper

Wooden Skewers

  • 1 pack wooden skewers Soak in water for 30 minutes before grilling.

Instructions
 

  • Start by preparing the marinade. In a mixing bowl, whisk together the freshly squeezed lemon juice, olive oil, minced garlic, chopped parsley, cilantro, oregano, salt, and pepper.
  • Cut the chicken breasts into 1-inch cubes and place them in a large resealable plastic bag or a bowl.
  • Pour the marinade over the chicken, seal the bag or cover the bowl, and refrigerate for at least 30 minutes.
  • While the chicken marinates, soak your wooden skewers in water.
  • Preheat your grill or grill pan over medium-high heat.
  • Thread the marinated chicken pieces onto the skewers, leaving space between each piece.
  • Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F (75°C).
  • Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
  • Serve warm, garnished with additional fresh herbs and lemon wedges.
