  • 1 lb Ground Beef Cooked until browned.
  • 1 packet Taco Seasoning For authentic taco flavors.
  • 1 can Black Beans Drained and rinsed.
  • 1 cup Corn Adds sweetness and crunch.
  • 6-8 pieces Tortillas Corn or flour, soft and pliable.
  • 2 cups Shredded Cheese Cheddar or Mexican blend.
  • 1 medium Onion Diced.
  • 1 piece Bell Pepper Diced, any color.
  • 2 tablespoons Olive Oil For sautéing vegetables.
  • to taste Fresh Cilantro For garnish.

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until soft and translucent, about 5-7 minutes.
  • Add ground beef to the skillet, breaking it apart. Cook until browned, about 8-10 minutes. Drain excess fat.
  • Sprinkle in taco seasoning, mixing well. Add black beans and corn, stirring to combine. Cook for an additional 2-3 minutes.
  • In a 9x13 inch baking dish, layer the bottom with tortillas, overlapping slightly.
  • Spoon half of the meat mixture over the tortillas, then sprinkle with shredded cheese. Repeat with another layer of tortillas, remaining meat mixture, and a final layer of tortillas.
  • Top the last layer of tortillas with remaining shredded cheese.
  • Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
  • Let the dish rest for about 10 minutes before serving.
  • Garnish with fresh cilantro before serving.

This dish can be customized with different proteins or vegetables to suit dietary preferences.
