Line a large cookie pan with parchment paper and preheat your oven to 350˚F.
In a large mixing bowl, combine 3 cups + 2 Tbsp all-purpose flour and 2 sticks of softened unsalted butter. Use your hands to mix until it resembles sandy crumbs.
In a separate bowl, whisk together 2 large eggs and 1 cup granulated sugar on high speed for about 5 minutes until pale yellow and smooth.
Pour the egg mixture over the flour and gently mix until well incorporated, taking care not to overmix.
In a small ramekin, mix 1 tsp baking soda with 2 tsp white vinegar until combined and pour it into the cookie batter along with 2 Tbsp liquid honey. Mix until the dough forms a cohesive ball.
Cover the dough with plastic wrap and let it rest at room temperature for 30 minutes.
Divide the dough into 4 pieces, rolling out each piece on a generously floured surface to about 1/8" thick.
Cut out shapes with a cookie cutter and transfer them to the lined cookie pan.
Poke holes in half of the cookies, making them about 1/3" wide. Bake at 350˚F for 5 to 8 minutes until lightly golden.
Once cool, spread your favorite jam on the base of the cookies without holes, topping them with the others. Dust with powdered sugar before serving.
