Instructions
Start by preparing the jalapeños. Wash and slice them in half lengthwise, then remove the seeds if you prefer a milder heat. Chop the jalapeños finely and set them aside.
In a mixing bowl, combine the chopped jalapeños with the cream cheese. Mix well until the jalapeños are evenly distributed throughout the cream cheese.
Take two slices of your chosen bread and spread a generous layer of the jalapeño-cream cheese mixture on one side of each slice.
Sprinkle approximately half of the shredded cheddar cheese over the cream cheese layer on one slice of bread.
Place the other slice of bread on top, cream cheese side down, creating a sandwich. Repeat the process to make a second sandwich.
In a skillet over medium heat, melt 1 tablespoon of butter. Ensure the butter coats the bottom of the skillet evenly.
Once the butter is melted and bubbling, gently place one sandwich in the skillet. Cook for about 3-4 minutes, or until the bottom is golden brown and crispy.
Carefully flip the sandwich using a spatula, adding the remaining tablespoon of butter to the skillet if needed. Cook for another 3-4 minutes on the other side until golden brown and the cheese is melted.
Once both sides are perfectly browned and crispy, remove the sandwich from the skillet and let it cool for a minute. Slice the sandwich in half and serve it warm.
Notes
For a smoky flavor, add some smoked gouda cheese. You can also experiment with different types of bread.
