Ingredients
  

  • 4 pieces chicken breasts boneless/skinless
  • 1/2 cup ketchup
  • 1/4 cup sriracha sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce use low sodium if you wish
  • 1/2 cup water
  • 3 teaspoons cornstarch plus 1/4 cup cold water to thicken sauce
  • to taste cooked rice
  • to taste scallions chopped

Instructions
 

  • Place the chicken breasts in your Instant Pot.
  • In a bowl, whisk the ketchup, sriracha, honey, soy sauce, and water until smooth. Pour over the chicken.
  • Close the lid and set the valve on 'sealing'. Cook on high pressure for 10 minutes.
  • Once the countdown has finished, do a quick pressure release. This ensures the chicken won't overcook.
  • Take the chicken out and place it on a cutting board.
  • Press the 'sauté' button on your Instant Pot. In a small bowl, mix the cornstarch + 1/4 cup cold water. Add it to your Instant Pot and let it simmer for a few minutes until the sauce has thickened up a bit.
  • Meanwhile, cut the chicken into bite-size pieces. Add it back into the Instant Pot when the sauce has thickened enough.
  • Serve over rice and with chopped scallions if you wish.

  • Tip 1: Inactive time indicates the time it takes for the Instant Pot to get up to pressure.
