Ingredients
  

  • 1 pound Chicken tenders

  • 1 cup Flour
  • 2 large Eggs, slightly beaten
  • 3/4 cup Panko breadcrumbs
  • 1/4 cup Seasoned fine breadcrumbs
  • as needed Olive oil spray
  • 3/4 cup Buffalo wing sauce
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Honey
  • 4 large Burrito-size tortillas
  • as needed Chopped romaine lettuce
  • as needed Crumble blue cheese
  • as needed Ranch dressing

Instructions
 

  • Preheat your oven to 425 degrees F. This temperature ensures that our chicken will bake up perfectly crispy.
  • Line a baking sheet with a wire rack. This is an essential step because it allows the heat to circulate around the chicken, helping it cook evenly and become golden.
  • Spray the wire rack with nonstick spray or your choice of olive oil, coconut oil, or avocado oil spray. This is key so the breading sticks to the chicken!
  • Prepare three bowls or large plates. In the first, add the flour; in the second, pour the beaten eggs; and in the third, mix together the panko breadcrumbs and the seasoned fine breadcrumbs.
  • Take the chicken tenders and generously sprinkle them with kosher salt, pepper, and garlic powder, making sure to coat both sides well.
  • Start dipping each piece of chicken into the flour, ensuring it’s completely covered. Shake off any excess flour.
  • Next, dip the floured chicken in the eggs, allowing the excess to drip off before moving to the breadcrumb mixture.
  • Press the chicken into the breadcrumb mixture gently, ensuring the crumbs adhere well. Place each breaded piece on the sprayed wire rack.
  • Place the baking sheet in the oven and bake the chicken for 12 minutes. Then, carefully flip each piece and bake for an additional 12 to 15 minutes, until they are crispy and cooked through.
  • While the chicken is baking, prepare the sauce. In a saucepan, combine the buffalo wing sauce, butter, and honey. Heat gently until the butter melts and whisk to combine, creating a smooth sauce.
  • Once the chicken is done, remove it from the oven. Brush each piece generously with the prepared wing sauce, ensuring every bite is packed with flavor.
  • Now it’s time to build your wrap! Heat the tortilla in the microwave for a few seconds or in the oven for one minute to make it pliable.
  • In the center of the wrap, place a handful of chopped romaine lettuce. Then, top it with one or two pieces of the crispy chicken.
  • Sprinkle on 1 to 2 tablespoons of crumbled blue cheese or cheddar cheese if you prefer. Drizzle with ranch dressing for extra creaminess.
  • To wrap it up, fold the top and bottom of the tortilla, then roll the sides in tightly. This keeps all the deliciousness inside!
  • Serve your wraps with extra wing sauce, ranch, and sides of carrots, celery, or chips for a complete meal!
