- 1 pound salmon
- Salt & pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons butter divided
- Fresh lemon juice to taste
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- 1/2 tablespoon cornstarch
- 1/4 teaspoon garlic powder
Take the salmon out of the fridge 15 to 20 minutes prior to starting the recipe if possible. Cut the salmon into 4 equal pieces and pat it dry with a paper towel. Season generously with salt and pepper on both sides.
Add the olive oil and 1 tablespoon of the butter to a skillet over medium-high heat. Let the pan heat up for a few minutes until it’s nice and hot.
While the pan heats, in a medium bowl, add the soy sauce, honey, and lemon juice. Whisk it together until well combined. Set aside.
Place the seasoned salmon into the skillet, skin-side down. Cook for 5 minutes, allowing the skin to become crispy and golden brown.
After 5 minutes, reduce the heat to medium and gently flip the salmon over. Cook for another 2 to 3 minutes, or until the fish is almost cooked through but still slightly translucent in the center.
Add the remaining 1 tablespoon of butter to the skillet. Once melted, pour the sauce mixture over the salmon. Let it bubble and thicken for about 30 seconds.
Remove the pan from the heat, but leave the salmon in the skillet. The residual heat will continue cooking the salmon and keep it moist.
Carefully flip the salmon over again and spoon the thickened sauce over the top. This adds an extra layer of flavor.
Finally, squeeze some fresh lemon juice over the salmon before serving. I like to use one wedge of lemon for a bright finish. Serve immediately for the best crispy skin.
