  • 2 lbs Carrots
  • ½ cup Unsalted Butter
  • 3 tablespoons Honey
  • 4 cloves Garlic, minced
  • ½ teaspoon Salt
  • ¼ teaspoon Freshly Ground Black Pepper
  • Fresh Parsley, finely chopped to garnish

Instructions
 

  • Preheat your oven to 425°F. It’s important to have your oven hot enough to roast the carrots effectively, ensuring they become tender and caramelized.
  • Spray a baking sheet or roasting pan with nonstick cooking spray and set it aside. This step will prevent the carrots from sticking, making cleanup a breeze.
  • Peel the carrots and trim the tops and bottoms. This helps prepare them for roasting. Next, cut the carrots on the bias into large pieces. Cutting them at an angle creates more surface area, which allows for better caramelization.
  • In a small skillet, add the butter, honey, and minced garlic. Heat it all until the butter has melted, stirring frequently for about 2 minutes. The aroma will be divine!
  • Place the prepared carrots on the baking sheet. Sprinkle with salt and pepper. Toss to coat the carrots evenly in the seasoning.
