Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the carrots, then cut them into even-sized sticks or rounds, about 1/2 inch thick.
  • In a large mixing bowl, combine the cut carrots with olive oil and toss to coat evenly.
  • Add honey and balsamic vinegar to the bowl and mix well to coat the carrots.
  • Season with salt and pepper, mixing to enhance the flavors.
  • Transfer the carrots to a baking sheet lined with parchment paper, spreading them out in a single layer.
  • Roast the carrots in the preheated oven for about 25-30 minutes, stirring halfway through.
  • Check for doneness; they should be tender and slightly caramelized. If needed, roast for an additional 5-10 minutes.
  • Remove from the oven and transfer to a serving platter, drizzling any remaining glaze over the top.
