  • 2 cups Fresh Spinach Washed and dried thoroughly.
  • 1 cup Feta Cheese Crumble fresh for best texture.
  • 4 large Tortilla Wraps Whole wheat or flour tortillas.
  • 2 tablespoons Olive Oil Extra virgin for sautéing.
  • 2 cloves Garlic Minced.
  • 1-2 tablespoons Lemon Juice Juice of half a lemon.
  • Salt and Pepper To taste.

Instructions
 

  • Gather all ingredients and tools, including a large frying pan, cutting board, knife, and spatula.
  • Rinse the spinach leaves under cold water and dry thoroughly.
  • Heat olive oil in a large frying pan over medium heat. Add minced garlic and sauté for about 30 seconds.
  • Add the washed spinach to the pan and stir continuously until wilted, about 2-3 minutes.
  • Remove from heat, squeeze lemon juice over spinach, and season with salt and pepper.
  • In a bowl, combine sautéed spinach and feta cheese, folding gently.
  • Lay a tortilla flat, spoon the spinach and feta mixture onto the center, and fold the sides inward before rolling tightly.
  • Return the pan to medium heat and cook the wrapped tortillas seam-side down for 2-3 minutes on each side until golden brown.
  • Remove from pan, let cool slightly, and slice in half diagonally before serving.
  • Serve immediately, garnished with lemon wedges or a drizzle of olive oil if desired.

Notes

For variations, consider adding grilled chicken, chickpeas, or extra veggies. You can also use different cheeses or herbs to customize the flavor.
