Washed and dried thoroughly.

Feta Cheese

Whole wheat or flour tortillas.

Extra virgin for sautéing.

Juice of half a lemon.

Instructions
Gather all ingredients and tools, including a large frying pan, cutting board, knife, and spatula.
Rinse the spinach leaves under cold water and dry thoroughly.
Heat olive oil in a large frying pan over medium heat. Add minced garlic and sauté for about 30 seconds.
Add the washed spinach to the pan and stir continuously until wilted, about 2-3 minutes.
Remove from heat, squeeze lemon juice over spinach, and season with salt and pepper.
In a bowl, combine sautéed spinach and feta cheese, folding gently.
Lay a tortilla flat, spoon the spinach and feta mixture onto the center, and fold the sides inward before rolling tightly.
Return the pan to medium heat and cook the wrapped tortillas seam-side down for 2-3 minutes on each side until golden brown.
Remove from pan, let cool slightly, and slice in half diagonally before serving.
Serve immediately, garnished with lemon wedges or a drizzle of olive oil if desired.
Notes
For variations, consider adding grilled chicken, chickpeas, or extra veggies. You can also use different cheeses or herbs to customize the flavor.
