Lean ground beef for the base of the casserole.
Vegetables

One red and one green, sliced thinly.

For baking.
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium-high heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.
Lower the heat to medium and add the chopped onion and minced garlic. Sauté for about 3 minutes until onions are translucent.
Add the sliced bell peppers and cook for an additional 5 minutes until they soften slightly.
Sprinkle in the salt, pepper, and Italian seasoning, mixing well.
In a greased casserole dish, spread half of the beef and vegetable mixture evenly across the bottom.
Sprinkle a generous amount of shredded cheese over the first layer.
Add the remaining beef and vegetable mixture on top of the cheese, followed by another layer of cheese.
Cover the casserole dish with aluminum foil and bake for 25 minutes.
Uncover and bake for an additional 15 minutes until bubbly and golden.
Let it rest for about 10 minutes before serving.

Notes
Leftovers can be stored in an airtight container for up to three days. This casserole freezes well for up to three months.
