Instructions
In a medium mixing bowl, combine the diced fresh peaches, sugar, and ground cinnamon. Toss until well coated and let sit for 10-15 minutes.
In a large bowl, combine the flour and salt. Add the cold butter and work it into the flour until it resembles coarse crumbs.
Gradually add ice water, mixing gently until the dough comes together. Divide into two portions, flatten into disks, and refrigerate for 30 minutes.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out one disk of dough to 1/8-inch thickness and cut out circles about 4-5 inches in diameter.
Spoon a tablespoon of peach filling onto each circle, fold over to create a half-moon, and seal the edges.
Transfer to the baking sheet, brush with egg wash, and sprinkle with sugar if desired.
Bake for 20-25 minutes until golden brown and bubbly. Cool slightly before serving.
Notes
