  • 4 medium Fresh Peaches Peeled, pitted, and diced.
  • 3/4 cup Granulated Sugar Enhances the natural sweetness of the peaches.

Crust Ingredients

  • 2 cups All-Purpose Flour Plus extra for dusting.
  • 1/2 teaspoon Salt Balances sweetness.
  • 1/2 cup Unsalted Butter Cold and cubed.
  • 4-5 tablespoons Ice Water Used to bring the dough together.
  • 1 large Egg Mixed with 1 tablespoon of water for egg wash.

Instructions
 

  • In a medium mixing bowl, combine the diced fresh peaches, sugar, and ground cinnamon. Toss until well coated and let sit for 10-15 minutes.
  • In a large bowl, combine the flour and salt. Add the cold butter and work it into the flour until it resembles coarse crumbs.
  • Gradually add ice water, mixing gently until the dough comes together. Divide into two portions, flatten into disks, and refrigerate for 30 minutes.
  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out one disk of dough to 1/8-inch thickness and cut out circles about 4-5 inches in diameter.
  • Spoon a tablespoon of peach filling onto each circle, fold over to create a half-moon, and seal the edges.
  • Transfer to the baking sheet, brush with egg wash, and sprinkle with sugar if desired.
  • Bake for 20-25 minutes until golden brown and bubbly. Cool slightly before serving.

Notes

These hand pies can be served warm or at room temperature. They pair well with vanilla ice cream or whipped cream.
