Instructions
Begin by preparing the chicken. Cut the chicken breasts into bite-sized pieces.
Set up a breading station: beat the eggs in one bowl and place the flour in another bowl, seasoned with salt and pepper.
Dip each piece of chicken into the egg mixture, then coat in flour. Set aside.
Heat vegetable oil in a skillet over medium-high heat. Test the oil with a small piece of flour.
Fry the chicken in batches for 4-5 minutes until golden brown. Drain on paper towels.
In a saucepan, combine orange juice, brown sugar, soy sauce, garlic, and ginger. Simmer for 5-7 minutes.
Add the fried chicken to the sauce and toss to coat. Cook for an additional 2-3 minutes.
Garnish with chopped green onions and serve over rice or with stir-fried vegetables.
Notes
For a spicy twist, add red pepper flakes to the sauce. You can also bake the chicken for a healthier version.
