Ingredients
  

Base Ingredients

  • 4 whole English Muffins Split in half
  • 2 tablespoons Olive Oil For toasting the muffins
  • 1 cup Shredded Cheese Use your favorite blend, such as mozzarella or cheddar
  • 4 large Eggs Cooked to preference (scrambled, sunny-side-up, or poached)
  • 1 cup Diced Vegetables Bell peppers, mushrooms, or spinach

Seasonings

  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Italian Herbs Oregano or basil

Optional Toppings

  • 1 cup Sliced Tomatoes Optional
  • 1 cup Olives Optional
  • 1 cup Cooked Chicken Optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Split the English muffins in half carefully using a serrated knife. Lay them cut-side up on a baking sheet lined with parchment paper.
  • Drizzle about 1 tablespoon of olive oil over the cut sides of the muffins and spread it evenly.
  • Toast the muffins in the oven for about 5-7 minutes or until golden brown.
  • While the muffins are toasting, prepare your eggs in a non-stick skillet over medium heat.
  • Once the muffins are toasted, remove them and sprinkle about ¼ cup of shredded cheese on each muffin half.
  • Add your cooked eggs on top of the cheese, followed by the vegetables if using.
  • Sprinkle the remaining cheese over the toppings and season with salt, pepper, and Italian herbs.
  • Return the baking sheet to the oven and bake for an additional 5-8 minutes until the cheese is melted and bubbly.
  • Remove from the oven, let cool for a minute, and garnish with fresh herbs if desired.
  • Serve immediately while warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave.
