Instructions
Preheat oven to 350°F (175°C) and prepare a 9x13-inch baking pan.
In a mixing bowl, combine brownie mix, water, oil, and eggs. Mix until smooth.
Pour batter into the prepared pan and bake for 20-25 minutes.
Cool brownies in the pan for 10 minutes, then transfer to a wire rack to cool completely.
If desired, fold chopped cherries into softened cherry ice cream.
Cut cooled brownies into 2x2 inch squares.
Assemble sandwiches by placing a scoop of ice cream between two brownie squares.
Freeze assembled sandwiches for 1-2 hours before serving.
Serve with whipped cream if desired.
Notes
Store leftovers in an airtight container in the freezer for up to a week.
