Ingredients
  

Brownie Ingredients

  • 1 box (18 oz) Brownie mix Choose a box mix for convenience or make from scratch.
  • 1/4 cup Water Required to prepare the brownie mix.
  • 1/2 cup Vegetable oil Adds moisture and richness.
  • 2 large Eggs Binding agent for the brownies.

Ice Cream Ingredients

  • 1 quart Cherry ice cream High-quality for best taste.
  • 1/2 cup Chopped cherries Optional, for added flavor.
  • 1 cup Whipped cream Optional, for serving.

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare a 9x13-inch baking pan.
  • In a mixing bowl, combine brownie mix, water, oil, and eggs. Mix until smooth.
  • Pour batter into the prepared pan and bake for 20-25 minutes.
  • Cool brownies in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • If desired, fold chopped cherries into softened cherry ice cream.
  • Cut cooled brownies into 2x2 inch squares.
  • Assemble sandwiches by placing a scoop of ice cream between two brownie squares.
  • Freeze assembled sandwiches for 1-2 hours before serving.
  • Serve with whipped cream if desired.

Notes

Store leftovers in an airtight container in the freezer for up to a week.
