Instructions
Prepare all ingredients by chopping vegetables into uniform pieces.
In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
Add minced garlic and stir for an additional minute.
Incorporate diced carrots and celery, sauté for about 5-7 minutes until softened.
Pour in vegetable broth and bring to a gentle simmer.
Add fresh ravioli and cook according to package instructions, usually around 4-5 minutes.
Add spinach and stir gently until wilted.
Season with salt and black pepper to taste, and add chopped basil and parsley.
Remove from heat and let sit for a few minutes before serving.
Serve hot, garnished with additional fresh herbs if desired.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
