  • 1 lb Fresh Ravioli Any filling such as cheese, spinach, or mushroom.
  • 4 cups Vegetable Broth Opt for low-sodium broth.
  • 2 tbsp Olive Oil Use high-quality extra virgin olive oil.
  • 2 medium Carrots Diced.
  • 1 stalk Celery Diced.
  • 1 medium Onion Diced.
  • 2 cloves Garlic Minced.
  • 2 cups Fresh Spinach
  • 2 tbsp Fresh Basil Chopped.
  • 2 tbsp Fresh Parsley Chopped.
  • to taste Salt
  • to taste Black Pepper Freshly ground.

Instructions
 

  • Prepare all ingredients by chopping vegetables into uniform pieces.
  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  • Add minced garlic and stir for an additional minute.
  • Incorporate diced carrots and celery, sauté for about 5-7 minutes until softened.
  • Pour in vegetable broth and bring to a gentle simmer.
  • Add fresh ravioli and cook according to package instructions, usually around 4-5 minutes.
  • Add spinach and stir gently until wilted.
  • Season with salt and black pepper to taste, and add chopped basil and parsley.
  • Remove from heat and let sit for a few minutes before serving.
  • Serve hot, garnished with additional fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
