Instructions
Preheat the oven to 350°F (175°C).
Line two baking sheets with parchment paper.
Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
Add the egg yolk and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour and salt, then gradually add to the wet ingredients until just combined.
Cover the dough with plastic wrap and refrigerate for about 30 minutes.
Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheets.
Press down in the center of each dough ball to create a heart shape.
Spoon in your chosen jam or chocolate filling into each thumbprint.
Bake for about 12-15 minutes or until the edges are lightly golden.
Let the cookies cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
If desired, sprinkle with decorative sprinkles or nuts before serving.
