  • 2 tablespoon olive oil

  • 4 slices turkey breast
  • 4 slices mozzarella cheese
  • 1/2 medium red onion
  • 3 cups spinach

  • Mince garlic finely and slice red onion thinly. These will form the flavorful base of your filling, so make sure they are prepared well.
  • In a small bowl, combine olive oil, balsamic vinegar, and minced garlic. This mixture will be brushed onto the bread, giving it a wonderful flavor and helping it to crisp up nicely.
  • Take your slices of multi-grain bread and brush one side of each slice with the olive oil mixture. This step is crucial as it helps to create that golden crust when grilled.
  • Place the bread slices, oil side facing out, onto a hot Panini press or grill pan. You want it to be hot enough to sizzle when the bread hits the surface.
  • Now, stack the layers! Start with a slice of bread, then add a layer of turkey, followed by a slice of mozzarella cheese, a few slices of red onion, and a handful of spinach. Repeat the layering until you reach the top slice of bread.
  • Top off your creation with another slice of bread, ensuring the oil side is facing outward again for that perfect crispiness.
  • Cover the sandwich with the lid of the Panini press or gently press down with a spatula if using a grill pan. Cook until the bread is grilled, and the mozzarella cheese is melted, about 3 to 5 minutes.
