Instructions
Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking dish by lining it with parchment paper or greasing it lightly.
In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well.
In a separate bowl, mash the ripe bananas until smooth. Add the almond butter, honey or maple syrup, and vanilla extract. Mix until combined.
Pour the wet mixture into the bowl with the dry ingredients. Stir until well combined.
Gently fold in the chopped strawberries.
Transfer the mixture into the prepared baking dish and spread it evenly.
Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
Allow to cool for 10-15 minutes, then lift out and cool completely on a wire rack.
Once cooled, cut into squares or rectangles and store in an airtight container.
