Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking dish by lining it with parchment paper or greasing it lightly.
  • In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well.
  • In a separate bowl, mash the ripe bananas until smooth. Add the almond butter, honey or maple syrup, and vanilla extract. Mix until combined.
  • Pour the wet mixture into the bowl with the dry ingredients. Stir until well combined.
  • Gently fold in the chopped strawberries.
  • Transfer the mixture into the prepared baking dish and spread it evenly.
  • Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
  • Allow to cool for 10-15 minutes, then lift out and cool completely on a wire rack.
  • Once cooled, cut into squares or rectangles and store in an airtight container.
