Instructions
In a medium bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Whisk together until smooth.
Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes.
Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and fresh parsley. Toss gently to mix and set aside.
Once the chicken is cooked, let it rest for about 5 minutes, then slice into strips or bite-sized pieces.
In a serving bowl, spoon in a generous portion of cottage cheese. Top with grilled chicken pieces and mixed vegetables.
Serve with toasted pita bread on the side. Drizzle with olive oil and sprinkle with additional parsley if desired.
