Instructions
 

  • In a medium bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Whisk together until smooth.
  • Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes.
  • Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  • In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and fresh parsley. Toss gently to mix and set aside.
  • Once the chicken is cooked, let it rest for about 5 minutes, then slice into strips or bite-sized pieces.
  • In a serving bowl, spoon in a generous portion of cottage cheese. Top with grilled chicken pieces and mixed vegetables.
  • Serve with toasted pita bread on the side. Drizzle with olive oil and sprinkle with additional parsley if desired.
  • Enjoy your meal immediately while the chicken is warm and the vegetables are fresh.
