Instructions
 

  • 1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook until al dente. Drain, reserving about 1 cup of pasta water.
  • 2. Heat olive oil in a large skillet over medium heat until shimmering.
  • 3. Season chicken with salt and pepper. Cook in the skillet for 5-7 minutes on each side until golden brown and cooked through.
  • 4. Remove chicken from skillet and let it rest before slicing.
  • 5. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  • 6. Return sliced chicken to the skillet and stir to combine with garlic.
  • 7. Add cooked pasta and reserved pasta water, tossing to combine.
  • 8. Stir in grated parmesan cheese until melted and creamy.
  • 9. Adjust seasoning with salt and pepper as needed.
  • 10. Serve hot, garnished with chopped parsley.
