Ingredients
  

  • 1 3/4 cups White whole-wheat flour
  • 1 tablespoon Cinnamon
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 1/2 cups Ripe bananas
  • 1/2 cup Coconut oil
  • 1 Egg
  • 1/4 cup Honey
  • 1 tablespoon Vanilla
  • 1/3 cup Mini dairy-free chocolate chips

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit and spray a muffin pan with cooking spray.
  • In a medium bowl, whisk together the white whole-wheat flour, cinnamon, baking soda, and salt.
  • In a separate bowl, whisk all the remaining ingredients except the chocolate chips.
  • Whisk the flour mixture into the wet ingredients until just combined. Don't over mix. Gently stir in the chocolate chips.
  • Spoon into 11 muffin tin cavities; they should be about 2/3 of the way full.
  • Bake for 5 minutes. Then, lower the heat to 375 degrees Fahrenheit and bake for 12-14 minutes, until a toothpick inserted comes out clean.
  • Let cool completely in the pan before serving.
