Instructions
Preheat the oven to 350°F (175°C).
Line an 8×8-inch baking dish with parchment paper.
In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, salt, and cinnamon (if using). Stir until well blended.
In a separate bowl, melt the unsalted butter and let it cool slightly. Add the melted butter and vanilla extract to the dry mixture and mix until crumbly.
Set aside about 1 cup of the crumb mixture for the topping.
In another bowl, gently mix the blueberries with lemon juice.
Press the remaining crumb mixture into the bottom of the prepared baking dish.
Spread the blueberry mixture evenly over the crust.
Sprinkle the reserved crumb mixture over the blueberries.
Bake for 30-35 minutes, or until the topping is golden brown and the blueberries are bubbling.
Let cool completely in the pan, then lift out using parchment paper and slice into squares.
