Instructions
Heat a large skillet over medium heat. Add olive oil and warm for a minute.
Add sliced onions and bell peppers to the skillet. Sauté for 5-7 minutes until tender and caramelized. Add minced garlic in the last minute.
In a separate bowl, season ground beef with salt, black pepper, and Italian seasoning. Mix well.
Push vegetables to one side of the skillet and add seasoned ground beef. Cook for 8-10 minutes, breaking apart as it cooks until browned.
Mix beef with sautéed vegetables and cook for an additional 2-3 minutes.
Reduce heat to low and layer sliced provolone cheese over the mixture. Cover to melt cheese.
Prepare hoagie rolls, toasting if desired.
Scoop the beef and vegetable mixture into hoagie rolls and serve hot. Offer optional toppings on the side.
