Ingredients
  

  • 1 Tbsp avocado oil
  • 1 medium yellow onion diced
  • 8 ounces baby bella mushrooms chopped
  • 4 cloves garlic minced
  • 1 lb ground beef
  • 2 tsp dried oregano
  • 2 Tbsp coconut aminos or soy sauce, optional
  • 5 ounces baby spinach 2 big handfuls
  • 1/2 tsp sea salt to taste

Instructions
 

  • Start by adding the avocado oil to a large skillet and heating it over medium-high heat. You want the oil hot enough that it shimmers - this will help to sauté the ingredients effectively.
  • Once the oil is hot, add the diced yellow onion to the skillet. Sprinkle liberally with sea salt and cover the skillet. Stir occasionally, aiming to cook the onion until it turns brown and starts to caramelize, which should take about 8 to 10 minutes.
  • After the onions have caramelized, stir in the chopped baby bella mushrooms and the minced garlic. Continue cooking until the mushrooms have softened and turned a nice brown color, which should take another 5 minutes. The combination of the onions and mushrooms will create a fragrant base for your dish.
  • Next, move the cooked veggies to one side of the skillet and add the ground beef to the empty space. Allow it to brown for 2 to 3 minutes on one side before using a spatula to break it into smaller chunks and mix it with the vegetables. Cook until the beef is no longer pink, stirring frequently.
  • Once the ground beef is fully cooked, add the dried oregano, coconut aminos or soy sauce (if using), and the baby spinach. Stir everything together well to combine.
  • Cover the skillet again and cook until the spinach has wilted, which should only take about 3 minutes. This will help the spinach to retain its vibrant green color and nutritional benefits.
  • After the spinach has wilted, taste the mixture and adjust the flavor. If needed, add more sea salt or a splash more of the liquid aminos or soy sauce. Don’t be shy - seasoning is key!
