Instructions
In a mixing bowl, combine the shredded chicken, diced bell peppers, diced onion, garlic powder, salt, and pepper. Mix well.
Lay a large flour tortilla flat. Place a generous amount of the filling in the center, followed by a mix of cheddar and Monterey Jack cheese.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place the burrito seam-side down in the skillet and grill for 3-4 minutes until golden brown.
Carefully flip the burrito, adding the remaining tablespoon of butter. Grill the second side for another 3-4 minutes until golden brown and the cheese is melted.
Remove the burrito from the skillet, let it cool for a minute, then slice in half and serve warm with toppings.
