  • 2 sheets Puff Pastry Sheets Thaw according to package instructions.
  • 8 ounces Goat Cheese Bring to room temperature for easier spreading.
  • 6-8 figs Fresh Figs Ripe and plump figs are best.
  • 2 tablespoons Honey Use high-quality honey for best results.
  • 1 tablespoon Olive Oil For brushing the pastry edges.
  • 1 teaspoon Fresh Thyme Use fresh for best flavor.
  • 1 pinch Salt To taste.
  • 1 pinch Pepper Freshly cracked, to taste.
  • 1 egg Egg Wash Beaten egg for brushing on pastry.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Roll out the thawed puff pastry sheets to about ¼ inch thickness and cut into 4-inch squares.
  • Lightly score a border about ½ inch from the edge of each square.
  • Mix goat cheese with salt, pepper, and thyme, then spread within the scored border of each pastry square.
  • Arrange sliced figs on top of the goat cheese layer.
  • Drizzle honey over the figs on each tart.
  • Brush the edges of the pastry with olive oil.
  • Brush the edges with the beaten egg for a golden finish.
  • Bake for 15-20 minutes until the pastry is puffed and golden brown.
  • Allow to cool slightly, then drizzle with more honey and sprinkle with thyme before serving.
