Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the russet potatoes thoroughly under running water. Pat them dry.
Cut each potato in half lengthwise, then cut each half into thick wedges, about 1 inch wide.
In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and dried Italian herbs. Stir well.
Add the potato wedges to the bowl and toss them gently in the oil mixture until well coated.
Line a baking sheet with parchment paper. Spread the coated potato wedges in a single layer on the baking sheet.
Bake the fries for about 25 minutes. After 25 minutes, flip the fries and return them to the oven for another 15-20 minutes, or until golden brown and crispy.
Once done, remove from the oven and sprinkle the grated Parmesan cheese over them while still hot.
