Ingredients
  

Potatoes

  • 2 pounds Yukon Gold or Russet Potatoes Cut into uniform cubes, approximately 1 to 1.5 inches.
  • 3 tablespoons Extra-Virgin Olive Oil For coating the potatoes.
  • 4-5 cloves Garlic Minced finely.
  • 0.5 cup Fresh Parmesan Cheese Grated.
  • 1 teaspoon Dried Oregano For added flavor.
  • 1 teaspoon Salt To taste.
  • 0.25 teaspoon Black Pepper To taste.
  • 2 tablespoons Fresh Parsley Finely chopped, for garnish.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly, then cut them into uniform cubes.
  • In a large mixing bowl, combine the cubed potatoes with the olive oil and toss until evenly coated.
  • Add the minced garlic, grated Parmesan, oregano, salt, and pepper to the bowl, and toss until well combined.
  • Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  • Roast the potatoes in the preheated oven for about 25-30 minutes, flipping halfway through.
  • Once done, sprinkle the remaining Parmesan cheese over the hot potatoes and allow to cool slightly.
  • Garnish with freshly chopped parsley and serve warm.

Notes

For variations, consider adding red pepper flakes for heat or mixing in other vegetables.
