Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly, then cut them into uniform cubes.
In a large mixing bowl, combine the cubed potatoes with the olive oil and toss until evenly coated.
Add the minced garlic, grated Parmesan, oregano, salt, and pepper to the bowl, and toss until well combined.
Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
Roast the potatoes in the preheated oven for about 25-30 minutes, flipping halfway through.
Once done, sprinkle the remaining Parmesan cheese over the hot potatoes and allow to cool slightly.
Garnish with freshly chopped parsley and serve warm.
Notes
For variations, consider adding red pepper flakes for heat or mixing in other vegetables.
