Instructions
In a large bowl, combine minced garlic, grated Parmesan cheese, olive oil, lemon juice, Italian seasoning, salt, and pepper. Mix well.
Cut the chicken breast into even, bite-sized pieces. Add to the marinade and coat evenly. Cover and marinate in the refrigerator for at least 30 minutes.
Soak the wooden skewers in water for about 30 minutes.
Preheat the grill to medium-high heat.
Thread the marinated chicken pieces onto the soaked skewers.
Grill the skewers for about 10-12 minutes, turning occasionally, until golden-brown and cooked through.
Remove from the grill and let rest for a few minutes before serving.
Serve warm, garnished with parsley or additional Parmesan cheese.
Notes
Leftover skewers can be stored in an airtight container in the refrigerator for up to 3 days.
