Instructions
 

  • Gather all your ingredients, ensuring everything is prepped and ready to go.
  • In a large skillet or Dutch oven, heat olive oil over medium-high heat until shimmering.
  • Season chicken breasts with salt and pepper, then sear in hot oil for 5-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  • Pour in chicken broth and bring to a gentle simmer. Stir in the rice.
  • Return the seared chicken to the skillet, nestling it into the rice mixture. Bring to a boil, then reduce heat to low and cover.
  • Let it simmer for 18-20 minutes until rice is tender and has absorbed most of the liquid.
  • Remove from heat and let sit covered for an additional 5 minutes.
  • Uncover and sprinkle Parmesan cheese over the top. Fluff the rice with a fork and serve hot, garnished with parsley.
