Instructions
In a small bowl, combine the warm water and granulated sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine the flour and salt. Add the melted butter and the activated yeast mixture. Mix until a dough begins to form.
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
Place the kneaded dough in a greased bowl, cover with a towel, and let it rise in a warm area for about 1 hour, or until doubled in size.
While the dough is rising, combine the shredded mozzarella cheese and pepperoni slices in a bowl. Set aside.
Once the dough has risen, punch it down and divide into 10-12 pieces. Roll each piece into a long rope and twist into a pretzel shape.
Press the center of each pretzel to create a pocket. Spoon in the cheese and pepperoni mixture and seal well.
Place the filled pretzels on a greased baking sheet, cover with a towel, and let rise for another 30 minutes.
Preheat your oven to 425°F (220°C).
In a saucepan, melt the remaining butter over low heat. Add minced garlic and Italian seasoning, cooking until fragrant.
Brush the tops of the pretzels with the garlic butter mixture and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.
Let the pretzels cool for a few minutes before serving. Brush with any remaining garlic butter for extra flavor.
