- 2 eggs
- 3 tablespoons unsalted butter (melted and cooled slightly)

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, salt, and nutmeg if using.
In a medium bowl, whisk together the buttermilk, eggs, butter, and vanilla extract until smooth.
