Instructions
In a medium mixing bowl, combine graham cracker crumbs with melted butter until evenly coated.
Distribute the graham cracker mixture among serving cups and press firmly to create a base.
In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
Add vanilla bean paste and mix until fully incorporated.
In another bowl, whip heavy cream and powdered sugar until stiff peaks form.
Fold the whipped cream into the cream cheese mixture gently.
Spoon the cheesecake filling over the crust in each cup, filling about three-quarters full.
Top each cup with sliced fresh strawberries.
Cover and refrigerate for at least 4 hours or overnight.
Garnish with reserved strawberries or whipped cream before serving.
