Instructions
1. Rinse the chicken breasts under cold water and pat dry. Cut into even pieces.
2. In a medium bowl, combine chopped jalapenos, minced garlic, lime juice, olive oil, salt, and pepper to create the marinade.
3. Dice the peaches and fold them into the marinade.
4. Place chicken in a resealable bag or dish, pour marinade over, seal, and refrigerate for at least 30 minutes.
5. Preheat grill or grill pan over medium-high heat.
6. Remove chicken from marinade, discard marinade, and grill chicken for 6-8 minutes on one side.
7. Flip chicken and cook for another 6-8 minutes until internal temperature reaches 165°F (75°C).
8. Remove from grill, let rest for 5 minutes, then slice and serve warm.
Notes
For variations, consider adding smoked paprika, honey, or serving with quinoa or grilled vegetables.
