Protein

  • 1.5 pounds Boneless Skinless Chicken Breasts Cut into even pieces for uniform cooking.

Vegetables

  • 2-4 pieces Fresh Jalapenos Finely chopped; remove seeds for milder flavor.
  • 2-3 pieces Ripe Peaches Diced into small chunks.

Condiments

  • 2 tablespoons Olive Oil Extra virgin for marinating.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Lime Juice Freshly squeezed.

Seasonings

  • to taste Salt
  • to taste Pepper

Instructions
 

  • 1. Rinse the chicken breasts under cold water and pat dry. Cut into even pieces.
  • 2. In a medium bowl, combine chopped jalapenos, minced garlic, lime juice, olive oil, salt, and pepper to create the marinade.
  • 3. Dice the peaches and fold them into the marinade.
  • 4. Place chicken in a resealable bag or dish, pour marinade over, seal, and refrigerate for at least 30 minutes.
  • 5. Preheat grill or grill pan over medium-high heat.
  • 6. Remove chicken from marinade, discard marinade, and grill chicken for 6-8 minutes on one side.
  • 7. Flip chicken and cook for another 6-8 minutes until internal temperature reaches 165°F (75°C).
  • 8. Remove from grill, let rest for 5 minutes, then slice and serve warm.

Notes

For variations, consider adding smoked paprika, honey, or serving with quinoa or grilled vegetables.
