Instructions
1. In a large mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. Whisk together.
2. Add 1 cup of cold unsalted butter to the flour mixture. Use a pastry cutter to work the butter into the flour until it resembles coarse crumbs.
3. Gradually add 1/4 to 1/2 cup of ice water, mixing gently until the dough comes together.
4. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
5. Preheat your oven to 400°F (200°C). Slice the tomatoes and place them on a paper towel to absorb moisture.
6. Roll out the chilled dough on a floured surface to a round shape, about 12 inches in diameter.
7. Arrange the sliced tomatoes in the center of the dough, leaving a 2-inch border. Layer fresh mozzarella on top.
8. Sprinkle fresh basil over the cheese, drizzle with olive oil, and season with salt and pepper.
9. Fold the edges of the dough over the filling, pleating as you go. Brush with beaten egg if desired.
10. Bake for 30-35 minutes until the crust is golden brown and the cheese is bubbly.
11. Let cool for a few minutes before slicing. Serve warm or at room temperature.
