Instructions
 

  • 1. In a large mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. Whisk together.
  • 2. Add 1 cup of cold unsalted butter to the flour mixture. Use a pastry cutter to work the butter into the flour until it resembles coarse crumbs.
  • 3. Gradually add 1/4 to 1/2 cup of ice water, mixing gently until the dough comes together.
  • 4. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • 5. Preheat your oven to 400°F (200°C). Slice the tomatoes and place them on a paper towel to absorb moisture.
  • 6. Roll out the chilled dough on a floured surface to a round shape, about 12 inches in diameter.
  • 7. Arrange the sliced tomatoes in the center of the dough, leaving a 2-inch border. Layer fresh mozzarella on top.
  • 8. Sprinkle fresh basil over the cheese, drizzle with olive oil, and season with salt and pepper.
  • 9. Fold the edges of the dough over the filling, pleating as you go. Brush with beaten egg if desired.
  • 10. Bake for 30-35 minutes until the crust is golden brown and the cheese is bubbly.
  • 11. Let cool for a few minutes before slicing. Serve warm or at room temperature.
