  • 2 cups Fresh Corn Grilled or boiled, kernels removed from the cob.
  • 1 pint Cherry Tomatoes Halved.
  • 8 ounces Fresh Mozzarella Cut into bite-sized pieces.
  • 1 handful Fresh Basil Torn or chopped.
  • 3 tablespoons Extra Virgin Olive Oil High-quality.
  • 1 tablespoon Balsamic Vinegar
  • Salt To taste.
  • Black Pepper Freshly cracked, to taste.

Instructions
 

  • Prepare the corn by removing the kernels from the cob or grilling it for a smoky flavor.
  • Wash and halve the cherry tomatoes, then place them in a large mixing bowl.
  • Cut the fresh mozzarella into bite-sized pieces and add to the mixing bowl.
  • Tear or chop the fresh basil leaves and add them to the bowl.
  • In a separate bowl, whisk together the olive oil and balsamic vinegar to create the dressing.
  • Pour the dressing over the salad ingredients and gently fold to combine.
  • Season with salt and black pepper to taste.
  • Let the salad sit for about 10 minutes to allow flavors to meld before serving.
  • Serve immediately or chill for up to an hour before serving.
