Instructions
 

  • Wash the baby Yukon Gold potatoes thoroughly under cold running water. Place them in a large pot in a single layer.
  • Add enough cold water to cover the potatoes by about an inch and sprinkle a generous amount of salt into the water.
  • Bring the pot to a rolling boil, then reduce the heat to medium-low and simmer for about 15-20 minutes until fork-tender.
  • Drain the potatoes in a colander and let them steam dry for a few minutes.
  • In a large mixing bowl, combine the olive oil, lemon juice, Dijon mustard, salt, and pepper. Whisk until well combined.
  • Transfer the drained potatoes to the mixing bowl and gently smash them with a fork or potato masher.
  • Pour the dressing over the warm potatoes and toss until well coated.
  • Add the cucumbers, red onion, parsley, and chives, folding them into the potato mixture.
  • Let the salad rest for at least 30 minutes at room temperature or refrigerate for an hour before serving.
