Beef Ingredients

  • 1.5 pounds beef roast Chuck roast is ideal for its rich flavor and tenderness when slow-cooked.
  • 1 tablespoon olive oil Used for searing the beef.
  • 1 medium onion, sliced Adds a sweet, caramelized flavor.
  • 3 cloves garlic, minced Provides a robust flavor.
  • 1 cup beef broth Base for the au jus sauce.
  • 1 tablespoon Worcestershire sauce Adds umami and richness.
  • 1 teaspoon dried thyme Adds subtle earthiness.

Bun Ingredients

  • 12 pieces slider buns Soft, mini buns like brioche or potato rolls.
  • 12 slices Swiss cheese Melts beautifully and adds creaminess.
  • to taste butter (optional) For brushing over buns before baking.

Instructions
 

  • Season the beef roast with salt and pepper on all sides.
  • Heat olive oil in a skillet over medium-high heat and sear the beef roast on all sides until browned, about 3-4 minutes per side.
  • Remove the roast and sauté sliced onions in the same skillet until soft and caramelized, about 5-7 minutes. Add minced garlic and cook for an additional minute.
  • Return the beef roast to the skillet, add beef broth and Worcestershire sauce, and sprinkle thyme over the top. Bring to a simmer.
  • Cover and let the beef simmer on low heat for about 3 hours, or until fork-tender. Alternatively, use a slow cooker for 6-8 hours on low.
  • Remove the beef, let it rest, then shred it into bite-sized pieces and return to the skillet.
  • Preheat the oven to 350°F (175°C). Slice slider buns in half and place the bottoms in a baking dish.
  • Spoon the shredded beef mixture onto the bottom halves of the buns and top with Swiss cheese.
  • Cover with the top halves of the buns, brush with melted butter if desired, cover with foil, and bake for 15 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and tops are golden.
  • Prepare the au jus by straining the cooking liquid into a small bowl. Serve sliders warm with au jus for dipping.
