  • 1 cup Cooked Sausage or Turkey Sausage Opt for your preferred type of sausage.
  • 1 tablespoon Olive Oil or Butter Used to cook the eggs and sausage.

Instructions
 

  • Start by preparing your ingredients. If using sausage, cook it according to package instructions until golden and crispy. Set aside to cool slightly.
  • In a skillet, heat olive oil or butter over medium heat. Crack the eggs directly into the skillet, and season with salt and pepper. Scramble the eggs until they are just set but still moist, about 3 to 5 minutes. If using vegetables, add them in during the last minute of cooking.
  • Once the eggs are cooked, remove them from heat and stir in the shredded cheese until it melts into the eggs, creating a creamy filling.
  • While the eggs are cooking, slice the English muffins or bagels in half and toast them lightly in a toaster or on a skillet.
  • Assemble the sandwiches by placing a generous portion of the egg and cheese mixture on the bottom half of each toasted muffin or bagel. Top with cooked sausage and any additional toppings like avocado or extra veggies.
  • Cover each sandwich with the top half of the muffin or bagel. If desired, wrap each sandwich in parchment paper.
  • Place the assembled sandwiches on a baking sheet and freeze them for about 30 minutes until solid.
  • Once frozen, transfer the sandwiches to a freezer-safe bag or container. Label them with the date for your reference.

Notes

These sandwiches can last up to three months in the freezer. Reheat in the microwave for 1-2 minutes or bake at 350°F for 15-20 minutes.
