Instructions
Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat until it shimmers.
Add 1 cup of diced onions and sauté for about 3-4 minutes until translucent.
Introduce 1 cup of diced bell peppers and cook for an additional 3-5 minutes.
Add 3 cloves of minced garlic and sauté for about 1 minute until fragrant.
Sprinkle in 2 tablespoons of Cajun seasoning and stir to coat the vegetables.
Pour in 4 cups of vegetable broth and bring to a gentle boil. Simmer for about 5 minutes.
Add 1 cup of orzo pasta, stir, reduce heat to low, and cover. Cook for 10-12 minutes until tender.
Stir in ½ cup of heavy cream until well combined.
Incorporate 1 cup of shredded cheddar cheese and stir until melted.
Adjust with salt and pepper to taste.
Remove from heat and let sit for a couple of minutes before serving.
Garnish with freshly chopped green onions before serving.
