Ingredients
  

  • 1 sheet puff pastry
  • 50g/2oz feta cheese
  • 8 red grapes
  • 2 tablespoons runny honey
  • ½ green chili

Instructions
 

  • First, preheat your oven to 180ºC/350ºF. This step is crucial for ensuring your puff pastry bakes evenly and puffs up nicely.
  • Next, ensure your puff pastry is defrosted. If you’ve frozen it, let it sit at room temperature for about 30 minutes. Once ready, roll it out on a floured surface.
  • Using a 5cm/2" cookie cutter, cut out 16 disks from the rolled-out puff pastry. Make sure to give them some space on your lined baking tray.
  • To prepare the disks, use a fork to prick the very center of each one. This will help the air escape during baking and avoid any bubbling.
  • Now, add a small amount of crumbled feta cheese into the middle of each disk. Be generous, but not too much, as you want to leave room for the other ingredients!
  • Slice the red grapes into quarters and add two quarters on top of the feta on each disk. This sweet touch is essential for balancing the flavors.
  • Next, drizzle the runny honey over each disk generously. The honey will caramelize and create a beautiful glaze as the bites bake.
  • Place the baking tray in the oven and bake for 10 to 12 minutes. You’re looking for a light golden color and the puff pastry to have risen nicely.
  • While the bites are baking, finely chop the green chili. If you prefer a milder taste, remember to remove the seeds and pith before chopping.
  • Once the timer goes off, take the tray out of the oven and sprinkle the chopped green chili over the warm bites. This will allow the heat to infuse beautifully.
  • Finally, serve the Feta and Honey Bites warm and enjoy the delightful combination of flavors!

Notes

Store any leftovers in an airtight container in the fridge for up to three days. Reheat gently in the oven to preserve the flakiness.
