Ingredients
  

  • 1 lb lean ground beef we used 85/15
  • 1 Tbsp olive oil
  • 1/2 tsp fine sea salt or to taste
  • 1/4 tsp pepper or to taste
  • 1/2 onion finely diced
  • 1 carrot julienned or coarsely grated
  • 3 garlic cloves minced
  • 3 cups cabbage thinly sliced
  • 1 tsp ground ginger
  • 1/4 cup low sodium soy sauce
  • 2 tsp sesame oil
  • 1/2 tsp granulated sugar
  • 1 Tbsp chopped green onion optional for garnish
  • 1/4 tsp sesame seeds optional for garnish

Instructions
 

  • Start by setting a large skillet over medium/high heat and add olive oil. Wait until the oil shimmers, indicating it’s hot enough to cook.
  • Next, add the ground beef to the skillet. Cook and break it up with a spatula until it’s browned and no longer pink, which should take about five minutes. Make sure to season it with salt and pepper to enhance the flavor.
  • Once the beef is cooked, add in the diced onion and carrots. Stir them together and sauté until the onion is tender, which takes about five to seven minutes. Stir occasionally to prevent sticking.
  • After the vegetables are soft, incorporate the minced garlic and cook for an additional thirty seconds, constantly stirring to prevent burning.
  • Now, it’s time to add the star ingredients: the cabbage, ginger, soy sauce, sesame oil, and sugar. Mix these in well, ensuring everything is coated in the sauces.
  • Continue sautéing the mixture for another five to seven minutes. You’ll want to stir occasionally until the cabbage is tender but still has a nice crunch.
  • Once everything is cooked to perfection, it’s ready to serve! Plate it up and garnish with chopped green onion and a sprinkle of sesame seeds if desired.
